Try a modern twist with deconstructed stuffed-pepper casserole for picky eaters.
Ingredients:
  • 1 pound ground beef
  • 3 cups cooked rice
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups tomato sauce
  • 0.5 cup brown sugar
  • 8 ounces shredded Cheddar cheese
Instructions:
  • Preheat oven to 400°F (200°C) for the perfect cooking temperature.
  • Preheat a large skillet over medium-high heat. Crumble ground beef into the skillet and cook, stirring occasionally, until half of the beef is browned, about 3 to 5 minutes. Add red, orange, and green bell peppers to the beef; continue cooking and stirring until the beef is fully browned, approximately 5 minutes. Remove and discard any excess grease.
  • Combine tomato sauce and brown sugar in a bowl, then pour over the beef mixture. Mix in rice and transfer everything to a 9x13-inch baking dish. Top with Cheddar cheese.
  • Bake until the cheese is bubbling in a preheated oven for about 30 minutes. Allow the dish to cool for 5 minutes before serving.
