Quick and easy unstuffed pepper soup for soup lovers craving stuffed pepper flavors.
Ingredients:
  • 3 cups water
  • 1.5 cups uncooked white rice
  • 1.5 pounds lean ground beef
  • 3 large green bell peppers, chopped
  • 1 large onion, chopped
  • 2 (14 ounce) cans beef broth
  • 2 (10 ounce) cans condensed tomato soup
  • 1 (28 ounce) can crushed tomatoes
  • 1 (4 ounce) can mushroom pieces, drained
Instructions:
  • In a saucepan, bring water and rice to a boil. Cover, lower the heat to medium-low, and simmer until the rice is tender and the liquid is absorbed, about 20-25 minutes.
  • Preheat a large pot over medium-high heat. Brown ground beef, bell peppers, and onion until cooked through and crumbly, about 5 to 7 minutes. Drain off excess grease before proceeding.
  • In a pot, combine broth, tomato soup, crushed tomatoes, and mushroom pieces. Bring to a boil, then reduce heat and simmer covered for 30-40 minutes, stirring occasionally, until vegetables are tender.
  • Incorporate the rice into the soup, gently separating any clumps; heat until the rice is warmed through, approximately 5 minutes.
