Cauliflower and leek gratin with pretzel crumbs

Indulge in a creamy cauliflower and leek gratin, topped with cheesy pretzel crumbs for a unique and satisfying crunch.
Ingredients:
  • 1 large cauliflower, cut into florets, cooked
  • 1 broccoli head, cut into florets, cooked
  • 2 leeks, thinly sliced
  • 35g plain flour
  • 375ml milk
  • 60g tasty cheese
  • 20g parmesan
  • 30g tasty cheese
  • 62.50 ml pretzels, finely crushed
Instructions:
  • Arrange the cauliflower and broccoli in a 6-cup (1.5L) oven-safe dish.
  • In a saucepan over medium heat, let the butter melt until it simmers. Sauté the leeks for 5 minutes until they are soft and aromatic. With a slotted spoon, combine the leeks with the cauliflower mixture.
  • Sprinkle plain flour into the saucepan and cook until bubbly, about 1 minute. Pour in milk and continue cooking, stirring continuously, until the sauce thickens and boils, around 5 minutes. Blend in the grated tasty cheddar and parmesan, season to taste, and drizzle over cauliflower mixture.
  • Top with more delicious grated cheddar and crushed pretzels. Bake at 180C for about 20 minutes or until beautifully golden and thoroughly heated.
