Lima Bean and Kielbasa Soup

Prep sausage and veggies, toss in slow cooker for a delicious meal waiting when you return home.
Ingredients:
  • 1 package (16 ounces) dried lima beans, sorted and rinsed
  • 1 pound kielbasa sausage, cut into 1/4-inch slices
  • 2 medium carrots, cut into 1/4-inch slices (1 cup)
  • 2 medium stalks celery, cut into 1/4-inch slices (1 cup)
  • 1 large onion, chopped (1 cup)
  • 6 cups water
  • 1/2 teaspoon pepper
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
Instructions:
  • Combine all ingredients, excluding the tomatoes, in a 5- to 6-quart slow cooker.
  • Cook on high heat setting, covered, for 10 to 12 hours until beans are tender.
  • Incorporate the tomatoes.
  • Cook covered over high heat for approximately 15 minutes until steaming hot.
