Transform holiday leftover spiral ham into a rich and hearty soup by simmering with tender lima beans for a satisfying meal.
Ingredients:
  • 1 (16 ounce) package dried lima beans
  • 2 quarts water
  • 1 ham bone with meat
  • 1 large onion, sliced
  • 3 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot pepper sauce
  • 1 teaspoon dry mustard
Instructions:
  • In a large bowl, generously cover lima beans with water and soak for 8 hours to overnight.
  • In a pot, simmer water, ham bone, and onion until the onion is tender, about 1 hour.
  • After rinsing lima beans, combine them with ham bone in a pot. Stir in brown sugar, Worcestershire sauce, hot sauce, dry mustard, and salt. Cover and simmer for about 2 hours. Uncover and cook for another 30 minutes until beans are tender.
  • Separate and discard ham bone, then chop the tender meat into bite-sized pieces before adding it back to the savory soup.
