Delicious and wholesome lima bean, corn, and quinoa medley - perfect as a meatless main or a flavorful side for grilled meats. Simple to prepare using frozen vegetables.
Ingredients:
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups water
  • 1 box (9 oz) frozen baby lima beans
  • 1 box (10 oz) frozen corn & butter sauce
  • 1 teaspoon paprika
  • 2 medium plum (Roma) tomatoes, seeded, chopped
  • Sliced green onions, if desired
Instructions:
  • Rinse quinoa under cold water in a fine strainer for 1 minute, then drain well. Heat quinoa and water in a 2-quart saucepan until boiling. Cover, reduce heat to low, and simmer for 12 to 15 minutes until tender and liquid is absorbed.
  • Cook the lima beans and corn according to package instructions, then drain the lima beans. Combine the drained lima beans, corn with butter sauce, paprika, salt, pepper, cooked quinoa, and tomato in a 10-inch skillet, and mix everything together well.
  • Heat the mixture over medium heat, stirring occasionally, until thoroughly heated for about 1 to 2 minutes. Top with a generous sprinkle of fresh green onions before serving.
