Luscious Lima Bean Soup

Delicious veggie and lima bean soup with rich flavors. Simmer for 1.5 hours and soak beans for 2 hours before cooking for perfect results.
Ingredients:
  • 1 pound dry lima beans
  • 4 cups water
  • 5 carrots, chopped
  • 1 leek, bulb only, chopped
  • 2 tablespoons minced shallots
  • 2 stalks celery, chopped
  • 4 cubes vegetable bouillon
  • 8 cups water
Instructions:
  • 1. Boil 4 cups of water in a pot. Stir in dry lima beans and boil for 2 to 3 minutes. Turn off the heat, cover, and let the beans rest for 1 to 2 hours to soften. Drain and rinse the beans until the water runs clear, discarding the bean water.
  • Saute vegetables in olive oil in a soup pot until onions and celery are translucent. Then add lima beans and saute for an additional 2 to 3 minutes.
  • While waiting, bring 4 cups of water to a boil in a large pot. Stir in the vegetable bouillon until dissolved. Combine the broth with the sauteed vegetables and beans. Pour in the rest of the water and simmer the soup over low heat for 1 to 1 1/2 hours. Serve piping hot.
