Indulge in a refreshing, fruity whipped cream dessert perfect for hot days.
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 2 tablespoons sugar
  • 1/4 cup butter or margarine (firm)
  • 2 packages (3 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 cups whipping (heavy) cream
  • 2 cups miniature marshmallows
  • 4 cups mixed fresh fruit
Instructions:
  • Preheat the oven to 375°F. Combine Bisquick and 2 tablespoons of sugar in a medium bowl. Use a pastry blender or two knives in a crisscross motion to cut in the butter until the mixture is crumbly. Press the mixture into the bottom of an ungreased 9x9x2 inch square pan.
  • Bake until golden brown, then allow to cool.
  • Combine cream cheese, 1 cup sugar, and vanilla in a large bowl and mix until smooth. In a separate chilled bowl, whip the cream until stiff peaks form. Fold the whipped cream and marshmallows into the cream cheese mixture, then spread the filling over the crust.
  • Chill in the refrigerator for a minimum of 4 hours until set. Cut into 9 squares and garnish each with fruit. Keep covered in the fridge.
