Elevate bread pudding with luscious fruit brioche slices for a decadent twist.
Ingredients:
  • 500g Toscano Sliced Brioche Fruit Loaf
  • 60g soft butter
  • 100g Brand Dark Chocolate, chopped
  • 5 eggs
  • 625ml milk
  • 300ml thickened cream
  • 70.95 gm caster sugar
  • 2 tsp orange zest, finely grated
  • 1 good pinch ground nutmeg
  • 17.20 gm demerara sugar
Instructions:
  • Preheat your oven to 160C (140C fan-forced) and lightly grease an 8-cup ovenproof dish. Save the 2 crusts for later and generously spread brioche slices with butter, then cut them diagonally. Place half of the brioche into the dish, overlapping slightly, and sprinkle with 3/4 of the chocolate.
  • In a large jug, combine eggs, milk, cream, sugar, and zest, whisking until smooth. Pour half of the mixture over the brioche in the dish. Layer the remaining brioche on top and pour the rest of the mixture over to cover completely. Sprinkle with nutmeg, demerara sugar, and the remaining chocolate.
  • Bake for 35-40 minutes until the top is golden brown and set. Allow it to rest for 10 minutes before serving.
