Whip up smooth Swedish meatballs with oats and potato flour for gluten-free goodness.
Ingredients:
  • 1.3333333730698 cups heavy cream
  • 0.75 cup rolled oats
  • 8 teaspoons potato flour
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
  • 2 tablespoons butter
  • 4 tablespoons finely chopped onion
  • 1 pound 85% lean ground beef
  • 2 teaspoons ground allspice
  • 2 tablespoons vegetable oil
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Combine cream, oats, potato flour, salt, and pepper in a bowl. Rest for 10 minutes at room temperature to achieve a mashed potato-like consistency as oats absorb the liquid.
  • In a skillet, melt butter over medium heat. Sauté onion until softened but still pale, about 3-4 minutes. Combine cooked onions with oat paste, then add ground beef and allspice. Mix until just combined, for 30-45 seconds.
  • Coat your hands with oil and shape mixture into meatballs, aiming for a size slightly smaller than a golf ball. Arrange meatballs on a baking sheet.
  • Place the meatballs in the preheated oven and bake until heated through, approximately 10 minutes. Allow them to cool briefly before serving.
  • Preheat a cast iron skillet over medium heat, then add oil. Brown meatballs in batches of 10, cooking for 3 to 5 minutes until golden.
