Authentic Amish-inspired crispy hash browns.
Ingredients:
  • 0.5 cup flour
  • 0.33333334326744 cup yellow cornmeal
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 5 cups peeled and shredded potatoes
  • 0.33333334326744 cup vegetable oil
  • 1 onion, minced
  • 0.25 cup vegetable oil
Instructions:
  • Combine flour, cornmeal, salt, and baking powder in a large bowl. Mix in potatoes, 1/3 cup oil, eggs, and onion until evenly combined.
  • In a large skillet over medium-high heat, heat 1/4 cup of oil until sizzling. Spoon heaping tablespoons of the potatoes into the hot oil, gently pressing to flatten. Cook until golden brown, flip, and cook the other side. Keep warm in the oven while frying the remaining batches.
