Amish Potato Soup

Creamy and cheesy Amish ham and potato soup, served in a bread bowl.
Ingredients:
  • 3 cups diced russet potatoes
  • 1.5 cups water
  • 0.5 cup grated carrot
  • 0.5 cup diced onion
  • 1 tablespoon chicken base
  • 1 pinch salt to taste
  • 2 cups milk, divided
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 0.5 pound cubed fully cooked ham
  • 1 (8 ounce) package processed cheese food (such as Velveeta®), cubed
  • 1 tablespoon dried parsley flakes
Instructions:
  • In a 6-quart soup pot over medium heat, simmer potatoes, water, carrot, onion, chicken base, and salt until potatoes are tender, about 20 minutes. Add 1 cup milk and stir well to combine.
  • In a small bowl, combine sour cream and flour until smooth; then mix in 1 cup of milk. Pour the mixture into the soup with the ham, simmer on low heat for 30 to 45 minutes until the soup thickens. Add cheese cubes and parsley, cook for an additional 10 minutes until melted and thickened.
