Family-favorite Chicken Pot Pie: a comforting German/Amish classic.
Ingredients:
  • 1 (2 pound) roasting chicken
  • 8 cups water, or as needed
  • 1 (28 ounce) can low fat, low sodium chicken broth
  • 3 large baking potatoes, peeled
  • 1 (10 ounce) package wide egg noodles
  • 1 teaspoon salt-free seasoning blend
Instructions:
  • In a large pot, submerge the chicken in water and bring to a boil. Cover and cook over high heat for about 35 minutes until the chicken is tender and easily falls off the bone. Flip the chicken halfway through to ensure even cooking. For faster cooking, consider cutting the chicken into pieces.
  • While the chicken simmers, dice one potato into large chunks and finely dice the remaining potato.
  • Once the chicken is cooked, take it out of the water. Remove the skin, transfer all the chicken meat to a different dish, and shred it into long pieces. Keep the cooking water aside in a separate container. Dispose of the chicken skin and bones.
  • In a large pot, combine chicken broth, potatoes, chicken, salt, and pepper. Add 2 to 3 cups of reserved water and bring to a boil. Cook for 15 minutes until potatoes begin to soften. Stir in 3 more cups of chicken water and noodles. Season with salt-free seasoning blend, salt, and pepper. Cover and simmer over medium-low heat until noodles are tender and potato pieces dissolve.
