Elevate simple stovetop rice with savory mushrooms, chicken broth, and green onions for a flavorful side dish.
Ingredients:
  • 2 (14.5 ounce) cans chicken broth
  • 2 cups converted rice (such as Uncle Ben's®)
  • 1 (4 ounce) can mushroom stems and pieces
  • 0.5 cup water
  • 6 green onions, chopped
  • 2 teaspoons butter, or to taste
Instructions:
  • In a large pot or Dutch oven over medium-high heat, mix together broth, rice, mushrooms, water, green onions, and butter. Bring to a boil, then simmer covered on medium-low for 20 minutes. Remove from heat and let stand for about 5 minutes until liquid is absorbed.
