Savory Yankee pot roast simmered with veggies and red wine - a simple stovetop delight!
Ingredients:
  • 0.25 cup olive oil
  • 1 (3 pound) beef round tip roast
  • flour for dredging
  • 3 medium onions, sliced
  • 3 large carrots, peeled and cut into small chunks
  • 3 large stalks celery, diced
  • 4 cloves garlic, minced
  • 3 whole allspice berries
  • salt and pepper to taste
  • 1 cup dry red wine
  • 2 (12 ounce) cans beef broth
  • 2 tablespoons cornstarch dissolved in a small amount of water
Instructions:
  • Begin by heating oil in a sturdy cast iron pot over medium heat. Coat the roast in flour, ensuring to remove any excess, then sear in the hot oil until browned on all sides.
  • Saute onions, carrots, celery, garlic, and allspice until golden brown. Deglaze with red wine and bring to a simmer. Add beef broth, cover, and simmer on low heat for 2 to 3 hours until beef is tender.
  • Transfer the meat to a cutting board and let it rest for 10 minutes before serving.
  • Thicken the cooking liquid with cornstarch after allowing the beef to rest. Slice the beef and serve with the delicious gravy.
