Quick and Easy White Chili

Stovetop white bean and pork chili simmered in chicken broth with canned chiles, spices, and topped with Jack cheese.
Ingredients:
  • 1 pound ground pork
  • 2 medium onions, chopped
  • 5 cloves garlic, chopped
  • 2 (4 ounce) cans diced green chiles
  • 2 teaspoons ground cumin
  • 4 cups chicken broth
  • 1 (14.5 ounce) can great northern beans, drained and rinsed
  • 2 cups shredded Monterey Jack cheese
Instructions:
  • Preheat a large skillet over medium-high heat. Saute pork in the hot skillet until golden and crumbly, about 5-7 minutes. Remove and discard excess grease.
  • 1. In a large stockpot, warm oil over medium heat. Cook onions and garlic until onions are transparent, approximately 5 minutes. Mix in chiles, cumin, and oregano, and cook until aromatic, about 2 to 3 minutes. Pour in broth, cooked pork, and beans. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  • Take off the heat and mix in Monterey Jack cheese until it's melted and smooth.
