Excellent Broccoli Cheese Soup

Velvety broccoli cheese soup made with roux, chicken stock, milk, and a blend of Cheddar cheeses - a comforting and simple stovetop recipe.
Ingredients:
  • 0.75 cup butter
  • 0.75 cup all-purpose flour
  • 9 cups chicken stock
  • 9 cups milk
  • 1.5 teaspoons white pepper
  • 5 cups fresh broccoli florets
  • 1.5 pounds processed cheese, shredded
  • 3 cups shredded Cheddar cheese
Instructions:
  • In a large pot, melt butter over medium heat. Add flour and stir continuously for about 2 minutes over low heat. Pour in chicken stock and milk, then season with white pepper and salt. Bring to a boil, then simmer on low for 10 minutes.
  • In another large pot, bring lightly salted water to a boil. Quickly cook broccoli until tender, for about 2 minutes. Drain and set aside.
  • Add the processed cheese and Cheddar cheese to the milk-stock mixture, stirring gently until fully melted. Mix in the broccoli and cook until tender, approximately 5 minutes.
