Excellent Apple Gingerbread

Gingerbread layer cake with apple filling, cream cheese frosting, candied walnuts, and apple topping.
Ingredients:
  • 0.25 cup butter
  • 3 Granny Smith apples - peeled, cored and chopped
  • 0.75 cup butter at room temperature
  • 1 tablespoon honey
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.5 cup milk
  • 0.5 cup chopped walnuts
  • 1 egg white
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 0.5 cup butter, softened
  • 1 cup confectioners' sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 (20 ounce) can apple pie filling
Instructions:
  • In a large skillet over medium heat, melt 1/4 cup of butter. Stir in the apples and cook until tender. Remove from heat and let it cool.
  • Preheat the oven to 350 degrees F (175 degrees C), and prepare two 9-inch round cake pans by greasing and flouring them.
  • In a large bowl, cream together 3/4 cup of butter, honey, brown sugar, and white sugar using an electric mixer until light and fluffy. Add the eggs one at a time, mixing well after each addition. In a separate bowl, combine the flour, baking soda, cinnamon, pumpkin pie spice, cloves, ginger, and salt. Slowly incorporate the dry ingredients into the batter, alternating with the milk. Gently fold in the walnuts and cooked apples until evenly dispersed. Divide the batter evenly between the prepared pans and spread it out smoothly.
  • Bake the cake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean. Then, cool the cakes on a wire rack while keeping the oven on for the walnuts.
  • Prepare the candied walnuts by whisking the egg whites in a pristine bowl until frothy. Mix in the brown sugar, cinnamon, and walnuts, then evenly spread them on a baking sheet.
  • Toast your ingredients in the preheated oven for about 10 minutes until they are golden and release their delightful aroma. Allow them to cool completely before using in your recipe.
  • Prepare the frosting by combining butter, confectioners' sugar, and cream cheese until smooth. Place one cake layer on a serving plate, spread a thin layer of frosting, top with most of the apple filling, then add the second cake layer bottom-side up. Frost the top and sides with the remaining frosting. Garnish with the rest of the apple filling and sprinkle candied walnuts on top.
