Excellent and Healthy Cornbread

Wholesome cornbread made with yogurt instead of oil, ready in 20 minutes.
Ingredients:
  • 1 cup unbleached flour
  • 1 cup cornmeal
  • 0.25 cup white sugar
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt
  • 1 cup plain nonfat yogurt
  • 2 large eggs, beaten
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease an 8-inch square baking pan.
  • In a large bowl, combine flour, cornmeal, sugar, baking soda, and salt. Add yogurt and eggs, mixing gently just until combined. Transfer batter to the prepared pan.
  • Bake until the center springs back when lightly touched, about 20-25 minutes in the preheated oven.
