Hearty Amish breakfast casserole with bacon, onion, hash browns, eggs, and 3 cheeses. Perfect for a crowd.
Ingredients:
  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 9 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1.5 cups small curd cottage cheese
  • 1.25 cups shredded Swiss cheese
Instructions:
  • Begin by preheating the oven to 350 degrees F (175 degrees C. Then, generously grease a 9x13-inch baking dish.
  • In a large skillet over medium-high heat, sauté bacon and onion together until the bacon is perfectly browned and crispy, for about 10 minutes. Remember to drain excess grease before proceeding.
  • Combine the cooked bacon and onion in a large bowl. Gently mix in the eggs, potatoes, Cheddar cheese, cottage cheese, and Swiss cheese until fully combined. Transfer the mixture to the prepared baking dish.
  • Cook the dish in the preheated oven until the eggs are firm and the cheese is nicely melted, for about 45 to 50 minutes. Allow it to rest for 10 minutes before slicing and serving.
