Cheesy baked chicken and black bean casserole with corn and salsa.
Ingredients:
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup salsa verde
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 1 (22 ounce) package Tyson® Grilled & Ready® Frozen Fajita Chicken Breast Strips
  • 1.5 cups shredded Mexican cheese blend
  • 0.5 cup crushed tortilla chips
Instructions:
  • Preheat the oven until it reaches 350°F.
  • In a 2-quart casserole dish, mix together corn, beans, salsa, cumin, coriander, chicken strips, and 1 cup of cheese.
  • Bake in a hot oven until bubbly, approximately 35 to 40 minutes.
  • Sprinkle the remaining 1/2 cup of cheese on top and bake until melted, for about 3 to 5 minutes. Optionally, add a sprinkle of crushed tortilla chips on top.
