Delicious chicken and rice casserole loaded with beans, veggies, and cheesy goodness - a simple crowd-pleaser for family meals!
Ingredients:
  • 0.33333298563957 cup brown rice
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 0.33333298563957 cup diced onion
  • 1 medium zucchini, thinly sliced
  • 2 cooked skinless boneless chicken breast halves, chopped
  • 0.5 cup sliced mushrooms
  • 0.5 teaspoon cumin
  • salt to taste
  • ground cayenne pepper to taste
  • 1 (15 ounce) can black beans, drained
  • 1 (4 ounce) can diced green chile peppers, drained
  • 0.33333298563957 cup shredded carrots
  • 2 cups shredded Swiss cheese
Instructions:
  • Combine the rice and flavorful vegetable broth in a pot and bring to a boil. Simmer gently on low heat, cover, and cook for 45 minutes or until the rice is tender.
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a large casserole dish.
  • In a skillet over medium heat, sauté the onion in olive oil until tender. Add zucchini, chicken, and mushrooms. Season with cumin, salt, and cayenne pepper. Cook until zucchini is lightly browned and chicken is heated through.
  • Combine cooked rice, onion, zucchini, chicken, mushrooms, beans, chiles, carrots, and half of the Swiss cheese in a large bowl. Transfer to a casserole dish and sprinkle with the rest of the cheese before baking.
  • Loosely cover the casserole with foil and bake in a preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and lightly browned.
