Spicy Mexican Casserole: Simmered chicken with black bean-corn mix, topped with cheese and tortilla chip crumbs, baked to perfection. Perfect for a quick, kid-friendly dinner.
Ingredients:
  • 0.75 pound cubed skinless, boneless chicken breast meat
  • 0.5 (1.25 ounce) package taco seasoning mix
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8.75 ounce) can sweet corn, drained
  • 0.25 cup salsa
  • water as needed
  • 1 cup shredded Mexican-style cheese
  • 1.5 cups crushed plain tortilla chips
Instructions:
  • Cook chicken in oil until golden and cooked through. Stir in taco seasoning, beans, corn, salsa, and a splash of water. Cover and simmer for 10 minutes to blend flavors.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Spread chicken mixture in a 9x13 inch baking dish and sprinkle with 1/2 cup of cheese and crushed tortilla chips on top.
  • Bake in the preheated oven for 15 minutes, then sprinkle with the remaining 1/2 cup of cheese and bake until golden and bubbly.
