Layered Mexican Casserole

Savor a flavorful Mexican beef and bean casserole layered with tortillas and rice. Ole!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 jar (16 oz) thick & chunky salsa
  • 8 corn tortillas (6 inch)
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 1/2 cups shredded Mexican cheese blend (6 oz)
  • 1 can (15 oz) Spanish rice
  • 1 cup coarsely crushed tortilla chips
Instructions:
  • Preheat the oven to 350°F. Grease an 11x7-inch baking dish with cooking spray. In a 10-inch skillet, sauté the beef over medium-high heat for 5 to 7 minutes until cooked through; then drain any excess fat. Add 1 cup of salsa and simmer for 2 minutes until heated through.
  • 1. Place 4 tortillas in the baking dish, overlapping as needed. 2. In a medium bowl, combine refried beans and the rest of the salsa; spread over the tortillas evenly. 3. Add half of the meat mixture and 3/4 cup of cheese on top. 4. Layer 4 more tortillas over the cheese and spread Spanish rice evenly. 5. Add the remaining meat mixture and cheese on top. 6. Garnish with tortilla chips.
  • Bake until center is hot and sides are bubbling, approximately 30-40 minutes.
