Cheesy Layered Mexican Bake: A delicious fusion of taco flavors in a hearty casserole with seasoned ground beef, sausage, and beans. Effortlessly prepare using Make-Ahead Seasoned Ground Beef and Sausage for a quick and satisfying dinner.
Ingredients:
  • 1/2 lb bulk spicy pork sausage
  • 1/2 lb ground beef round
  • 1 can (15 oz) ranch-style pinto beans, drained
  • 1 can (10 oz) diced tomatoes with green chiles, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (10 3/4 oz) condensed cream of celery soup
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 9 soft corn tortillas (6 inch)
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • 2 cups shredded Monterey Jack or pepper Jack cheese (8 oz)
  • 1 medium tomato, chopped (3/4 cup)
  • 4 medium green onions, chopped (1/4 cup)
  • 1 medium avocado, chopped
  • Sour cream, if desired
  • Fresh cilantro leaves, if desired
Instructions:
  • Preheat your oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a 12-inch nonstick skillet, sauté sausage and beef over medium-high heat for 5 to 7 minutes, stirring frequently, until fully cooked; then, drain any excess fat. Add beans, diced tomatoes, garlic powder, cumin, salt, and pepper. Cook for an additional 2 minutes until heated through.
  • Combine the soups and enchilada sauce in a 2-quart saucepan. Heat over medium heat for 3 minutes, stirring constantly until warm.
  • Spread a layer of sauce in the baking dish, followed by 3 tortillas. Add half of the meat mixture on top, then layer with more sauce and 1 cup of Cheddar cheese. Repeat with 3 more tortillas, the rest of the meat mixture, sauce, Cheddar cheese, and tortillas. Finish by sprinkling 1 cup of Monterey Jack cheese on top.
  • Loosely cover with foil and bake for 20 minutes. Remove foil, sprinkle with 1 cup Monterey Jack cheese, and bake for an additional 10 minutes. Allow to stand for 10 minutes before serving. Top with tomato, onions, avocado, a dollop of sour cream, and garnish with cilantro.
