Satisfy your cravings with this delicious layered southwestern bake - a crowd-pleaser loaded with seasoned ground beef, robust black beans, sweet corn, crunchy tortilla chips, and gooey Cheddar cheese. Perfect for any gathering!
Ingredients:
  • 1 pound lean ground beef
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 teaspoons chili powder
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (8.75 ounce) cans whole kernel corn, drained
  • 1 (16 ounce) container sour cream
  • 2 cups fresh salsa
  • 5 cups crushed plain tortilla chips
  • 3 cups shredded Cheddar cheese
  • 1 large fresh tomato, finely chopped
  • 3 green onions, chopped
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Brown ground beef along with aromatic garlic and onion in a skillet over medium heat, then drain excess fat.
  • Combine the meat mixture, chili powder, black beans, corn, sour cream, and salsa in a large mixing bowl. Mix until fully blended.
  • Spread a layer of the beef mixture to cover the bottom of a 9x13 inch baking dish. Sprinkle half of the crushed tortilla chips over the meat, then add 1 cup of Cheddar cheese. Spoon another layer of the beef mixture on top, followed by the remaining tortilla chips and another cup of cheese. Finish with a final layer of the beef mixture, sprinkle the remaining cup of cheese on top, and garnish with diced tomatoes and green onions.
  • Place in the oven and bake for 40 minutes. Allow to cool for 10 minutes prior to serving.
