Southwestern Bean Bake

Savor a comforting vegetarian bean bake with flavorful cornmeal biscuits on top.
Ingredients:
  • 1 can (15 oz) Progresso™ kidney beans, drained, rinsed
  • 1 can (15 to 16 oz) great northern beans, drained, rinsed
  • 1 can (14.5 oz) stewed tomatoes, undrained
  • 1/2 cup thick & chunky salsa
  • 1/4 cup ketchup
  • 1 1/2 cups Original Bisquick™ mix
  • 1/2 cup yellow cornmeal
  • 2/3 cup milk
  • 1 tablespoon butter or margarine, softened
  • 4 medium green onions, sliced (1/4 cup)
Instructions:
  • Preheat oven to 425°F. In a 2-quart saucepan, bring beans, tomatoes, salsa, and ketchup to a boil, stirring occasionally. Once boiling, remove from heat and pour into an ungreased 2-quart casserole dish.
  • Combine all remaining ingredients in a medium bowl and mix until a soft dough forms. Beat the mixture 20 times. Drop spoonfuls of the dough onto the bean mixture in the casserole dish, spreading it to the edges.
  • Bake until golden brown, uncovered, for 20 to 25 minutes.
