Spicy and cheesy Southwest black bean egg bake - a flavorful vegetarian brunch with a kick from hot sauce and diced tomatoes with green chiles.
Ingredients:
  • 3 cups shredded Monterey Jack cheese (12 oz)
  • 2 cups canned black beans, drained, rinsed
  • 1 cup canned diced tomatoes with green chiles, drained, rinsed
  • 3 green onions, chopped
  • 1 cup Original Bisquick™ mix
  • 2 cups milk
  • 6 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Sriracha or other Frank's™ RedHot™ Original cayenne pepper sauce, if desired
Instructions:
  • Combine 2 cups of cheese with black beans, diced tomatoes with green chilies, and green onions in a large bowl, stirring until mixed.
  • In a separate large bowl, whisk together Bisquick® mix, milk, eggs, salt, and pepper until fully incorporated. Pour the mixture over the cheese and beans, then stir everything together until combined.
  • Spray 13x9-inch pan with cooking spray, then pour in the egg mixture. Cover the pan with plastic wrap and refrigerate for at least 8 hours, but no longer than 24 hours.
  • Preheat your oven to 350°F. Generously sprinkle 1 cup of cheese over the delicious egg mixture.
  • Bake for around 45 minutes until edges turn golden brown and a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes before slicing and enjoy with Sriracha sauce.
