Effortless oven-baked turkey and black bean tacos for a simple and quick taco night with easy clean-up.
Ingredients:
  • 1 box (4.7 oz) Old El Paso™ Stand 'n Stuff Taco Shells (10 Count)
  • 1 tablespoon vegetable oil
  • 1 lb ground turkey
  • 1 medium chopped onion (1/2 cup)
  • 1 packet (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 1/3 cup water
  • 1 can (16 oz) Progresso™ black beans, drained, rinsed
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 2 cups shredded Colby-Monterey Jack cheese (8 oz)
  • 1 medium avocado, pitted, peeled and cubed
  • 1/4 cup chopped fresh cilantro leaves
  • Lime wedges and sour cream, if desired
Instructions:
  • Preheat oven to 400°F. Grease the bottom of a 13x9-inch (3-quart) baking dish with cooking spray. Stand the taco shells together in the dish; set aside.
  • In a 10-inch nonstick skillet, heat oil over medium-high heat. Cook turkey and onion for 5 to 7 minutes until turkey is cooked through. Stir in taco seasoning mix and water, bring to a boil, then simmer for 2 to 3 minutes until thickened. Remove from heat and serve.
  • In a medium bowl, use a potato masher to blend the beans until smooth, then mix in the green chiles.
  • Spread a generous amount of bean mixture on the bottom of each shell. Sprinkle a heaping tablespoon of cheese on top of the bean mixture followed by a heaping 1/4 cup of turkey mixture on each shell. Finish by adding the remaining cheese on top. Bake for 5 to 7 minutes until the cheese is melted. Garnish with the remaining ingredients before serving.
