Delicious chicken enchiladas layered with tortillas, cheese, and a flavorful salsa-bean-sour cream mix. A robust and satisfying dish.
Ingredients:
  • 1 (16 ounce) container sour cream
  • 1 (16 ounce) jar salsa
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) can chili beans, drained
  • 0.25 cup diced onion
  • 6 (12 inch) flour tortillas, cut into strips
  • 6 skinless, boneless chicken breast halves - cooked and shredded
  • 4 cups shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine the sour cream, salsa, condensed soup, chili beans, and onion in a large bowl.
  • Begin by arranging a third of the tortilla strips on the base of a 9x13-inch baking dish. Follow by adding a third of the chicken, a third of the sour cream mixture, and a third of the Cheddar cheese on top. Repeat this layering process with the remaining ingredients.
  • Bake in the preheated oven until golden and bubbly for 20-30 minutes. Allow to stand for about 10 minutes before serving.
