Spicy Mexican casserole with layers of corn tortillas, ground turkey, cheese, and homemade enchilada sauce, topped with crisp lettuce and juicy tomatoes. Seek out specific chili powder brand online.
Ingredients:
  • cooking spray
  • 1.5 cups canned tomato sauce
  • 0.33333334326744 cup chili powder (such as Gebhardt®)
  • 0.5 cup water, or as needed
  • 1.5 pounds ground turkey
  • 1.5 cups chopped onion
  • 2 (1 ounce) packages taco seasoning mix, divided
  • 0.66666668653488 cup water
  • 16 (5 inch) corn tortillas, cut in half
  • 3 cups shredded sharp Cheddar cheese
  • 3 cups shredded Monterey Jack cheese
  • 1.5 (10 ounce) bags shredded iceberg lettuce
  • 2 cups chopped fresh tomatoes
Instructions:
  • 1. Preheat your oven to 425 degrees F (220 degrees C) while you generously spray a 3-quart casserole dish with cooking spray.
  • In a small saucepan over medium heat, mix tomato sauce with chili powder and 1/2 cup water (add more if desired). Bring to a simmer, stirring until it becomes a smooth pourable sauce. Remove from heat and set aside as your flavorful enchilada sauce.
  • In a large skillet over medium heat, sauté ground turkey, onion, and one packet of taco seasoning mix, breaking up the turkey as it cooks, until meat is crumbly and no longer pink, approximately 10 minutes. Add 2/3 cup water and the second packet of taco seasoning mix, cook until the liquid has evaporated. Finally, stir in 1 cup of enchilada sauce, then remove from heat.
  • Create layers in the casserole dish by arranging 8 tortilla halves on the bottom, overlapping as needed. Mix sharp Cheddar cheese and Monterey Jack cheese together, then sprinkle a quarter of the cheese blend evenly over the tortillas. Add one-third of the turkey mixture, lettuce, chopped tomatoes, and approximately one-third cup of the sauce. Repeat this process twice more. Finish by placing 8 tortilla halves on the top layer and spread the remaining 1 1/4 cups of shredded cheese mixture over them.
  • Bake in the preheated oven until the cheese on top of the casserole is golden and bubbly, for 20 to 30 minutes.
