Try a dairy-free German Pancake with spelt flour and coconut milk for a delicious, impressive breakfast or brunch.
Ingredients:
  • 2 tablespoons coconut oil
  • 7 eggs
  • 1.25 cups unsweetened coconut milk
  • 1 cup spelt flour
  • 0.5 teaspoon Himalayan pink salt
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and spread coconut oil in a 9x13-inch baking dish.
  • Place baking dish in the oven for about 3 minutes to melt the coconut oil.
  • In a large bowl, blend together eggs and coconut milk until smooth. Stir in spelt flour and salt until the batter is silky. Transfer the batter into the preheated baking dish.
  • Bake in the hot oven until puffed and golden, rotating the dish halfway through, for approximately 18 minutes.
