Elevate penne pasta with a savory cauliflower, tomato, and beef sauce.
Ingredients:
  • 1 (14.5 ounce) package penne pasta
  • 1 tablespoon olive oil
  • 2 pounds cauliflower florets
  • 1 pound ground beef
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes, drained
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1 pinch red pepper flakes
Instructions:
  • 1. Boil salted water, add penne, and cook until al dente, about 11 minutes. Drain.
  • As pasta boils, warm oil in a large skillet over medium-high heat. Sauté cauliflower for 3 minutes. Then, add beef, onions, and garlic, cooking until beef is browned for 5-7 minutes. Mix in tomatoes, parsley, salt, and pepper flakes. Cover and simmer for 10 minutes.
  • Drain the penne and toss it into the skillet, mixing well. Serve.
