Ingredients:
  • 500g penne rigate
  • 45.50 gm olive oil
  • 3 middle bacon rashers (about 225g), rind removed, roughly chopped
  • 2 garlic cloves, crushed
  • 1 bunch (about 200g) asparagus, trimmed, cut into 4cm pieces
  • 200g yellow button squash, sliced
  • Salt & ground pepper, to taste
  • 2 medium ripe tomatoes, diced
  • 82.50 ml torn fresh basil leaves
Instructions:
  • Boil pasta in a pot of salted water according to package instructions until it's perfectly al dente.
  • Heat 1 teaspoon of olive oil in a medium frying pan until shimmering. Cook bacon until crisp, then drain on paper towel. Add more olive oil, garlic, asparagus, squash, salt, and pepper to the pan. Cook for 3 minutes, then add diced tomatoes and cover for 2-3 minutes. Drain pasta, return to the pan, and mix with vegetables and bacon. Cook for 1 minute over medium-low heat to blend flavors.
