Ingredients:
  • 425g can tuna in oil
  • 500g penne rigate
  • 40.00 ml baby capers
  • 45g can anchovy fillets in oil, drained, finely chopped
  • 1 small red onion, halved, thinly sliced
  • 62.50 ml flat-leaf parsley, chopped
  • 1 lime, rind finely grated, juiced
Instructions:
  • Flake the tuna and keep the flavorful oil.
  • Cook pasta according to the package instructions until tender. Drain the pasta, saving 2 tablespoons of the cooking water. Place the pasta back into the pan along with the reserved water.
  • Combine tuna, reserved oil, capers, anchovies, onion, parsley, lemon rind, lemon juice, salt, and pepper in a skillet over low heat. Toss gently until heated through. Serve hot.
