Ingredients:
  • 500g penne rigate
  • 36.40 gm olive oil
  • 1 medium red onion, peeled, thinly sliced
  • 2 garlic cloves, crushed
  • 90g (1/2 cup) marinated and quartered artichokes (Rodenas brand), halved
  • 1 425g can tuna (in oil), drained, flaked
  • 21.00 gm lemon juice
  • Ground black pepper, to taste
  • 82.50 ml roughly chopped fresh Continental parsley
  • Ciabatta bread, sliced, to serve
Instructions:
  • Boil the penne in a pot of salted water according to the package instructions until it's al dente. Then, drain and set aside.
  • In the same saucepan, heat olive oil over medium heat. Saute onion and garlic for 3 minutes until onion is soft. Add penne, artichokes, tuna, lemon juice, and pepper. Cook for 2-3 minutes until tuna is heated through. Garnish with parsley and serve with ciabatta bread slices. (See microwave tip for alternative heating method.)
