Enjoy a quick and healthy trip to Italy with this low-fat pasta dish.
Ingredients:
  • 1 lemon, juiced
  • 1 garlic clove, crushed
  • 375g penne rigate
  • 100g snow peas, topped, cut into strips
  • 100g sugar snap peas, trimmed, halved
  • 125.00 ml frozen peas
  • 150g low-fat feta cheese, crumbled
  • 125.00 ml mint leaves, chopped
Instructions:
  • In a jug, whisk together 1/4 cup of lemon juice, oil, and garlic. Season with salt and pepper, then set aside.
  • Cook the pasta in a large saucepan of boiling salted water according to the package instructions until tender. Toss in snow peas, sugar snap peas, and frozen peas for the final 2 minutes of cooking. Drain and return everything to the saucepan.
  • Combine crumbled feta cheese, fresh mint, and dressing with the pasta. Gently toss over low heat until fully mixed. Season with pepper to taste and serve.
