Quick and easy shrimp pesto penne with snap peas, ready in minutes with pre-made pesto.
Ingredients:
  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 pound (21-25 count) large shrimp, peeled and deveined
  • 1 (8 ounce) package sugar snap peas, washed and cut in 1/2 -inch pieces
  • 1 (8 ounce) container refrigerated prepared pesto
  • 1 lemon
Instructions:
  • Boil a sizable pot of lightly salted water. Cook penne until al dente, about 11 minutes. Save 1/2 cup of pasta water before draining; keep aside.
  • Heat a generous amount of oil in a large skillet until shimmering. Sear shrimp undisturbed for 2 minutes. Toss in snap peas and continue cooking until shrimp are almost cooked through. Mix in pesto and cooked pasta until fully coated.
  • Combine 1 teaspoon of fresh lemon zest and the lemon juice with the pasta, tossing well. Adjust consistency with pasta water as necessary, then serve promptly.
