Cheesy shrimp Alfredo penne bake with sun-dried tomato pesto and veggies.
Ingredients:
  • 0.75 (16 ounce) package penne rigate
  • 2 tablespoons olive oil
  • 1 pound cooked medium shrimp with tails intact
  • 1 cup chopped green bell pepper
  • 1 cup diced baby bella mushrooms
  • 1 (16 ounce) jar Alfredo sauce
  • 1 (15 ounce) can diced tomatoes
  • 2 cups shredded Italian cheese blend
  • 1.5 cups grated Parmesan cheese, divided
  • 2 (6 ounce) tubs sun-dried tomato pesto
  • 0.5 cup seasoned bread crumbs
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • 1. Boil a large pot of lightly salted water. Add penne and cook until al dente, stirring occasionally, for 8 to 10 minutes.
  • Heat olive oil in a pan over gentle heat. Cook shrimp, green pepper, and mushrooms until vegetables are tender, around 10 minutes.
  • Drain the penne pasta. In a large bowl, combine Alfredo sauce, tomatoes, Italian cheese blend, and 1 cup of Parmesan cheese. Mix well. Add the shrimp mixture and mix thoroughly. Then, add the pesto and mix again. Gently fold in the penne pasta.
  • Pour the penne mixture into a baking dish. Combine the rest of the Parmesan cheese with the bread crumbs and sprinkle over the penne.
  • Bake until bubbly in the preheated oven for 25-30 minutes.
