Healthier Alfredo Sauce with Shrimp and Broccoli

Healthier Alfredo sauce made with Greek yogurt, cream cheese, shrimp, broccoli, and bacon for a delicious twist.
Ingredients:
  • 1 slice bacon, diced
  • 3 cups broccoli florets, cut into 1/2-inch pieces
  • 0.25 lemon, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 tablespoons all-purpose flour
  • 1 cup 2% milk
  • 4 tablespoons low-fat whipped cream cheese
  • 2 cups chicken broth
  • 1 cup shredded Parmesan cheese, divided
  • 0.5 cup shredded Italian cheese blend
  • 1 (7 ounce) container plain 2% Greek yogurt
  • 0.75 pound raw medium shrimp - peeled, tails off, and deveined
  • 1 teaspoon garlic powder, or to taste
  • 1 teaspoon Italian seasoning
  • 6 sprigs fresh parsley
Instructions:
  • In a large frying pan over medium-high heat, cook bacon, stirring occasionally, until almost cooked through, about 6 minutes. Lower the heat to medium, add broccoli, and saute until vibrant green and tender-crisp, 3 to 5 minutes. Transfer the bacon and broccoli to a bowl lined with paper towel to blot excess oil, then toss with lemon juice.
  • In a deep saucepan over medium heat, warm olive oil and butter until bubbling. Whisk in flour until golden brown, around 3 minutes. Slowly pour in milk while whisking until smooth. Lower the heat, add cream cheese, and whisk until smooth. Pour in chicken broth, increase heat to medium, and simmer until thickened for 5 to 7 minutes.
  • Stir in 3/4 cup Parmesan cheese and Italian cheese until well combined. Mix in Greek yogurt. Cook shrimp until bright pink on the outside and opaque inside, about 3 to 4 minutes. Sprinkle with garlic powder, Italian seasoning, salt, and pepper.
  • Take the saucepan off the heat and gently combine the broccoli-bacon mixture. Finish by sprinkling the remaining Parmesan cheese and garnishing with fresh parsley.
