Healthier version with reduced fat, saturated fat, and calories. Also significantly lowers cholesterol and sodium levels.
Ingredients:
  • 1 lb uncooked fettuccine
  • 2 cups whole milk
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • Dash freshly ground black pepper
  • Dash ground red pepper (cayenne)
  • 2 tablespoons butter
  • 2 teaspoons finely chopped garlic
  • 2 oz 1/3-less-fat cream cheese (Neufchâtel)
  • 2/3 cup grated Parmesan or Romano cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Cook the fettuccine according to the package instructions without adding salt. Drain the pasta and then return it to the saucepan. Cover to keep it warm and set it aside.
  • In a medium bowl, whisk together milk, flour, salt, black pepper, and red pepper until smooth. In a 2-quart saucepan, melt butter over medium-low heat. Add garlic and cook for 1 minute, stirring constantly (be careful not to burn it). Gradually whisk in the milk mixture into the butter mixture in the saucepan. Cook and stir over medium heat for 6 to 8 minutes until the mixture thickens and comes to a boil.
  • Blend cream cheese and Parmesan cheese until silky smooth. Drizzle over fettuccine and mix gently to envelop the pasta. Garnish with fresh parsley.
