Cut cholesterol and fat by 91% and 56% respectively by using whole wheat flour, ground walnuts for added fiber and nutty taste.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1 cup Gold Medal™ whole wheat flour
  • 1/4 cup coarsely ground toasted walnuts
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 4 egg whites
  • 2 1/4 cups buttermilk
  • 2 tablespoons oil
  • Cascadian Farm™ frozen organic blueberries
  • 1/4 cup white grape juice
  • 1 tablespoon honey
Instructions:
  • Combine all-purpose flour, whole wheat flour, walnuts, baking powder, and baking soda in a medium bowl. In a large bowl, use an electric mixer to beat egg whites until very foamy. Mix in buttermilk and oil. Gradually fold in the flour mixture by hand until smooth.
  • - Pour 1 cup of batter onto a preheated, lightly greased square waffle baker (or 2/3 cup for a round waffle baker), close the lid promptly without opening it until the waffle is fully cooked as per manufacturer directions. - Once done, carefully lift the waffle off the grids using a fork. - Repeat with the remaining batter and serve the warm waffles with Cascadian Farm™ Blueberry Sauce.
  • In a medium saucepan, mix together 1 cup Cascadian Farm™ frozen blueberries, 1/4 cup white grape juice, and 1 tablespoon honey. Heat until bubbles form, then cool slightly. Blend until smooth, transfer to a bowl, and stir in additional 1 cup blueberries. Enjoy about 1 2/3 cups of delicious sauce.
