Shrimp Alfredo Naan Pizza

Elevate shrimp Alfredo with naan crust into a cheesy shrimp Alfredo pizza.
Ingredients:
  • aluminum foil
  • 0.33333334326744 cup chopped onion
  • 0.33333334326744 cup chopped red bell pepper
  • 0.33333334326744 cup sliced fresh mushrooms
  • 0.33333334326744 cup chopped zucchini
  • 0.33333334326744 cup broccoli florets
  • 0.33333334326744 cup cauliflower florets
  • 2 tablespoons olive oil, divided
  • salt and ground black pepper to taste
  • 0.25 pound butter
  • 8 fluid ounces heavy cream
  • 0.75 cup grated Parmesan cheese
  • 2 cloves garlic, finely chopped
  • 1 pound large shrimp, peeled and deveined
  • 2 (8.8 ounce) packages 2-pack garlic naan bread
  • 0.5 cup shredded Italian cheese blend, or to taste
  • 0.5 cup shredded Asiago cheese, or to taste
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) while lining 3 baking sheets with aluminum foil and lightly spraying them with cooking spray.
  • Mix a colorful array of veggies - onions, bell pepper, mushrooms, zucchini, broccoli, and cauliflower in a bowl. Drizzle with a tablespoon of olive oil, sprinkle with salt and pepper, then toss to coat. Transfer the veggie mix onto one of the baking sheets.
  • Bake the vegetables in the preheated oven until tender, for approximately 15 minutes. Remove them and set aside. Lower the oven temperature to 400°F (200°C).
  • Melt butter in a saucepan over gentle heat. Stir in heavy cream and Parmesan cheese until the sauce becomes velvety and thickens, approximately 10 minutes.
  • In a skillet over medium heat, heat the remaining tablespoon of oil. Add garlic and cook until browned, for 1 to 2 minutes. Pat the shrimp dry with paper towels and then add to the skillet. Increase heat to medium-high and cook until shrimp are pink, for 3 to 4 minutes.
  • On the last 2 foil-lined baking sheets, lay out 2 naans on each. Spritz the tops of the naans with cooking spray. Spread Parmesan-cream sauce on each naan, covering all the way to the edge. Layer cooked vegetables on top, then cooked shrimp. Drizzle the rest of the sauce over the shrimp and sprinkle with shredded Italian and Asiago cheeses.
  • Bake the naan pizzas until the cheese is gooey and bubbling, and the naans are beginning to crisp up, about 10 to 15 minutes.
