Pesto shrimp orzo: a speedy and savory Italian dish for busy nights.
Ingredients:
  • 8 ounces orzo pasta
  • 1 tablespoon pesto, divided
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 cups frozen cooked shrimp, thawed
  • 0.5 cup diced red bell pepper
  • 1 teaspoon capers
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon red pepper flakes
  • salt and ground black pepper to taste
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon olive oil, or to taste
Instructions:
  • 1. Boil a large pot of lightly salted water. Add orzo and cook for about 11 minutes, stirring occasionally, until al dente. Drain and transfer to a bowl. Mix in 2 teaspoons of pesto and 2 tablespoons of extra-virgin olive oil.
  • Warm a tablespoon of extra-virgin olive oil in a skillet. Sauté shrimp, red bell pepper, and capers until shrimp is heated through, about 3 to 5 minutes. Add the remaining teaspoon of pesto, oregano, garlic powder, red pepper flakes, salt, and pepper to the shrimp mixture. Stir and cook until combined, about 1 to 2 minutes.
  • Combine orzo with the shrimp mixture, then generously sprinkle Parmesan cheese over the top and drizzle with a splash of flavorful olive oil.
