Creole Shrimp Pasta

30-Minute Shrimp Orzo Bowl: A delicious and hearty meal with vibrant flavors in every bite!
Ingredients:
  • 1 1/4 cups uncooked orzo or rosamarina pasta (8 oz)
  • 2 tablespoons olive oil
  • 1 large onion, chopped (1 cup)
  • 2 stalks celery, thinly sliced (1 cup)
  • 2 small yellow or green bell peppers or 1 of each, chopped (1 cup)
  • 3 large cloves garlic, finely chopped
  • 1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained
  • 2 teaspoons Cajun seasoning
  • 1 lb uncooked medium shrimp (thawed if frozen), peeled (tail shells removed), deveined
Instructions:
  • Prepare and cook orzo according to package instructions.
  • In a 12-inch nonstick skillet, heat oil over medium-high heat. Sauté onion and celery for 3 to 5 minutes until they begin to soften. Stir in bell peppers and cook for an additional 2 to 3 minutes. Add garlic and cook for 30 seconds until fragrant.
  • Combine the tomatoes and Cajun seasoning in the pot and bring to a boil. Then, add the shrimp and cook over medium-high heat, stirring occasionally, until the shrimp turn pink and vegetables are tender-crisp.
  • For serving, divide 3/4 cup of orzo into each of the 4 shallow bowls. Then, generously top each serving with 1 1/2 cups of the shrimp mixture. If desired, add a sprinkle of fresh chopped parsley on top for an added touch of flavor.
