Impressive appetizer: Twice-baked mini potatoes with butter, two cheeses, and Creole shrimp topping.
Ingredients:
  • 6 slices bacon
  • 1.5 pounds baby potatoes
  • 3 tablespoons butter, melted
  • 3 tablespoons mascarpone cheese
  • 3 green onions, finely chopped
  • 3 tablespoons shredded Cheddar cheese
  • 0.5 pound shrimp, peeled and deveined
  • 1 pinch Creole seasoning, or to taste
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C), or select the "Combo 3" setting if using a countertop induction oven.
  • In a large skillet over medium-high heat, sizzle the bacon until perfectly crispy and golden, about 10 minutes. Place the cooked bacon on paper towels to absorb excess grease, then crumble into bite-sized pieces.
  • Coat potatoes with vegetable oil and season generously with salt and pepper before spreading them on a baking sheet.
  • Place the potatoes in the preheated oven and bake until tender, approximately 30 minutes for a conventional oven and 20 minutes for a countertop induction oven. Allow the potatoes to cool until they are easy to handle, around 5 minutes.
  • Trim off the top 1/4 of each potato lengthwise. Use a melon baller or small spoon to scoop out the flesh into a bowl, leaving a 1/8-inch layer of flesh on the skin.
  • Combine melted butter and mascarpone cheese with the potato flesh, mix until fluffy with a hand mixer for about 30 seconds. Fold in bacon, green onions, and Cheddar cheese. Stuff potato skins with the mixture and place back on the baking sheet.
  • - Bake filled potatoes in the preheated oven for about 5 minutes until warmed through. - Switch on the oven's broiler and broil the potatoes for 3 to 4 minutes until the cheese is bubbly and browned. - Remove the potatoes from the oven.
  • Coat shrimp generously with zesty Creole seasoning and place them on a grill pan.
  • Grill shrimp over high heat until they turn opaque, roughly 3 minutes. Top each potato with 1 cooked shrimp.
