Mini Black Bean Burgers

Delicious and quick spicy veggie burgers on corn tortillas with fresh fixings. Perfect meatless option bursting with flavor.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1/4 cup finely chopped red onion
  • 1 teaspoon finely chopped garlic
  • 1 can (15 oz) black beans, drained, rinsed
  • 1 tablespoon chopped pickled jalapeño chiles
  • 1/4 cup Food Should Taste Good™ peppercorn blend brown rice crackers, finely ground
  • 1/2 teaspoon chile powder
  • 1/4 teaspoon ground cumin
  • 1/3 cup whole kernel corn (thawed, if frozen)
Instructions:
  • Heat 1 tablespoon of oil in a nonstick skillet over medium heat. Sauté red onion for 1 to 2 minutes until softened. Add garlic and cook for 30 seconds. Remove from heat and let it cool slightly.
  • Combine black beans, chiles, ground crackers, chili powder, cumin, salt, and onion mixture in a large bowl. Mash the mixture with a potato masher or fork, leaving some chunks. Add corn and mix well. Shape into 10 patties either by hand or with a 1-oz scoop, then flatten them.
  • In the same skillet, heat the remaining oil over medium heat. Cook the burgers in batches for about 2 1/2 minutes on each side or until lightly browned. Keep the cooked burgers warm while you finish cooking the rest. Serve on tortillas or slider buns, if desired.
