Simple mini black forest cheesecakes: decadent blend of chocolate and cherries for a festive indulgence.
Ingredients:
  • 12 chocolate sandwich cookies with creme filling
  • 2 (8 ounce) packages cream cheese, softened
  • 0.33333334326744 cup baking cocoa
  • 2 large eggs
  • 1 (21 ounce) can cherry pie filling
  • 0.5 cup whipped topping
Instructions:
  • Preheat your oven to a toasty 325 degrees F (160 degrees C) and prepare your muffin cups by lining them with paper or foil liners.
  • Crush the tops of the sandwich cookies and set them aside. Place the creme-topped cookies in the muffin cups with the creme side facing up.
  • Using an electric mixer, blend cream cheese, sugar, cocoa, and vanilla in a large bowl until fluffy. Incorporate eggs until well combined. Fill muffin cups 3/4 full and sprinkle 1/4 cup reserved cookie crumbs on top. You can discard any leftover crumbs or save them for later use.
  • Bake in the preheated oven for 20 to 25 minutes until fully set. Allow to cool completely, then cover and refrigerate for a minimum of 2 hours.
  • Before serving, generously spoon 2 tablespoons of cherry filling on top of each cheesecake, and add a luscious dollop of whipped topping for an extra touch of decadence.
