Indulgent single-serve cheesecakes, ideal for entertaining or as a special treat.
Ingredients:
  • 150g pkt Oreo biscuits
  • 50g unsalted butter, melted
  • 500g cream cheese, at room temperature
  • 215g (1 cup) caster sugar
  • 4.40 gm vanilla extract
  • 3 eggs
  • 200g ctn creme fraiche
  • 150g dark chocolate, finely chopped
  • 125ml (1/2 cup) or liqueur of your choice
  • 100g (1/2 cup) caster sugar, extra
  • 350g cherries, fresh or frozen
Instructions:
  • Grease the stainless steel ramekins, then line the base with thick strips of baking paper, allowing them to overhang for easy removal of the cheesecakes.
  • Pulse biscuits in a food processor until finely crushed. Add butter and pulse until mixture is well combined. Divide evenly into prepared ramekins (about 1 1/2 tablespoons each) and press firmly into the base. Chill on a baking tray in the fridge for 30 minutes to set.
  • - Preheat the oven to 160C/140C fan forced. - Blend together cream cheese, sugar, and vanilla in a food processor until smooth. - Incorporate eggs until smooth. - Mix in crème fraîche until just combined. - Stir in chocolate until combined. - Divide mixture into ramekins. - Bake for 30 minutes or until set. - Let it cool, then refrigerate for 4 hours to set.
  • In a saucepan over medium heat, combine Chambord and extra sugar. Stir and cook for 3 minutes until sugar dissolves. Bring to a simmer, add cherries, and simmer for 15 minutes until soft. Set aside to cool. Drain cherries, save the liquid. Simmer the liquid in the saucepan for 5 minutes until reduced and syrupy. Cool completely.
  • Carefully glide a flat-bladed knife around the edges of the ramekins. Gently use the overhanging paper to transfer the cheesecakes to serving plates. Finally, top with cherries and drizzle with syrup.
