Irresistible mini pancakes for all ages!
Ingredients:
  • 185g self-raising flour
  • 20.00 gm caster sugar
  • 250ml milk
  • 1 Free Range Egg, lightly whisked
  • 40g butter, melted
  • Melted butter, extra, to brush
Instructions:
  • In a bowl, mix together the flour and sugar. In a separate jug, whisk the milk, egg, and butter together. Pour the wet ingredients into the dry mixture and stir until well combined. Let it rest for 15 minutes.
  • Preheat a large non-stick frying pan over medium-low heat and brush with a bit of extra melted butter. Pour four 1-tbsp portions of the mixture, giving ample space for spreading. Cook for about 1 minute until bubbles appear, then flip and cook for another minute until golden and cooked through. Transfer to a plate and repeat with the remaining mixture in 6 more batches.
  • Garnish with your favorite toppings before serving.
